Instructions
- Step1: Crisp the BaconIn a skillet over medium heat, lightly sauté the chopped bacon for 2-3 minutes until the fat renders outand it becomes slightly crispy. Remove the bacon and set aside, but leave the rendered bacon fat inthe pan to mix into the batter or grease the skillet

- Step 2: Make the BatterIn a large mixing bowl, combine the chopped kimchi, kimchi juice, flour, ice-cold water (or sparklingwater), and sugar. Mix gently just until incorporated—avoid overmixing to keep the texture light. Fold inthe cooked bacon pieces.

- Step 3: Heat the PanReheat the skillet over medium-high heat with a little oil. Pour in the batter, spreading it out as thinly andevenly as possible across the pan to ensure maximum crunchiness.

- Step 4: Fry until CrispyCook for 3-4 minutes until the bottom is golden brown and the edges turn wonderfully crisp. Watch forbubbling and firming edges.

- Step 5: Flip and FinishFlip the pancake over, press down gently with a spatula, and cook for another 2-3 minutes until bothsides are ultra-crispy. Serve hot immediately!
