Creamy kimchi carbonara brings together fermented kimchi, smoky pancetta, a glossy egg-and-cheese sauce, and a spoonful of whipped Gorgonzola. The blue cheese melts slowly into the hot noodles, making each bite richer and tangier without covering up the kimchi.
Why Gorgonzola Works with Kimchi
Use a soft, creamy Gorgonzola Dolce rather than an aggressively sharp blue cheese. Its buttery texture reinforces the carbonara while its gentle funk mirrors the fermented depth of kimchi. The trick is to keep it mostly on top rather than stirring all of it into the sauce, so diners can control how much richness lands in each bite.
Creamy Kimchi Carbonara with Whipped Gorgonzola
Silky kimchi carbonara with pancetta, egg, Pecorino, and a cool spoonful of whipped Gorgonzola cream. Allergens: wheat, egg, milk, and sesame.
For lower-risk handling of the carbonara sauce, use pasteurized eggs. Keep the pan off direct heat when adding the egg mixture, serve immediately, and refrigerate leftovers within 2 hours.
🛒 Ingredients (Dual Measurements)
- 200 g (7 oz) spaghetti or bucatini
- 120 g (4.2 oz / about 1 cup) well-fermented kimchi, chopped
- 80 g (2.8 oz) pancetta or thick-cut bacon, diced
- 8 g (2 cloves) garlic, finely minced
- 2 large egg yolks
- 1 large whole egg
- 35 g (1.2 oz / about 1/3 cup) finely grated Pecorino Romano or Parmesan
- 120–180 ml (1/2–3/4 cup) reserved pasta water
- 15 g (1 tbsp) unsalted butter
- Freshly ground black pepper, to taste
- 25 g (0.9 oz) Gorgonzola Dolce
- 35 g (1.2 oz) cream cheese or mascarpone
- 15–30 ml (1–2 tbsp) heavy cream
- 2 scallions, thinly sliced
- 1 tsp toasted sesame seeds
- Extra blue cheese crumbles, optional
Step-by-Step Instructions
- Step 1: Whip the Gorgonzola cream: Mix the Gorgonzola Dolce, cream cheese or mascarpone, and 1 tablespoon cream until smooth and spoonable. Add the second tablespoon only if needed. Refrigerate while you cook.

- Step 2: Crisp the pork and sauté the kimchi: Cook the pancetta or bacon in a wide skillet over medium heat until lightly crisp. Add the chopped kimchi and garlic and sauté for 2–3 minutes, until the kimchi looks glossy and concentrated.

- Step 3: Cook the pasta and build the base: Boil the pasta in well-salted water until about 1 minute shy of al dente. Reserve at least 1 cup of pasta water. Add the drained noodles to the kimchi pan with the butter and a splash of pasta water, tossing until the noodles are hot and coated.

- Step 4: Emulsify off the heat: Whisk the yolks, whole egg, grated cheese, and plenty of black pepper in a bowl. Take the skillet completely off the heat, wait 20 seconds, then add the egg mixture while tossing continuously. Add hot pasta water a tablespoon at a time until the sauce turns glossy, creamy, and thick enough to cling to the noodles.

- Step 5: Finish with whipped Gorgonzola: Plate the pasta immediately. Spoon a generous quenelle or dollop of whipped Gorgonzola over the center, then finish with scallions, sesame seeds, black pepper, and a few optional blue cheese crumbles. Let the cool cheese melt into the hot pasta as you eat.

K-Taste Tip
Keep the Gorgonzola topping cool until the last moment. The contrast between hot, glossy carbonara and cool blue-cheese cream makes the pasta feel richer without turning the whole sauce heavy.
