
Smacked Cucumber Salad
The Art of Smacking: Korean Cucumber Salad (Oi-Tang-Tang-I)
Ingredients
- 2 ea Kirby or Persian Cucumbers Small, crunchy, and thin-skinned are best for smacking
- ½ ea 1 Bell Pepper Any color (Red or Yellow) for a sweet crunch and vibrant color
- ½ tsp Sea Salt For initial seasoning and to draw out excess moisture.
- 2 ea cloves Garlic Garlic minced (Freshly minced for the best aroma)
- 1 tbsp sugar To balance the acidity.
- 2 tbsp Rice Vinegar Apple cider vinegar also works well.
- 1 tbsp Toasted Sesame Oil The soul of Korean nutty flavor.
- 1 tbsp Toasted Sesame Seeds For texture and a nutty finish.
Instructions
- 1. Prep the Veggies Wash the cucumbers and bell pepper. Pat them dry completely with a paper towel.

- 2. Smack the Cucumbers Place cucumbers in a bag. Gently smack them with a rolling pin until they crack open.

- 3. Hand-Tear & Slice Remove the watery seeds from the cracked cucumbers using a spoon. Tear them into bite-sized chunks by hand. Slice the bell pepper into matching squares.

- 4. Season & Mix Combine all veggies in a bowl. Add salt, minced garlic, sugar, and rice vinegar. Toss well until the sugar is fully dissolved.

- 5. The Final Garnish Add thinly sliced green bell pepper. Drizzle with toasted sesame oil and sprinkle with sesame seeds. Serve immediately.

1. Adjust to Your Taste
Feel free to increase the amount of Toasted Sesame Oil for a richer aroma. For a deeper, nuttier flavor, try grinding the Sesame Seeds in a mortar or blender before adding them.

Add a teaspoon of Gochugaru (Korean red pepper flakes) for a vibrant color and a fresh spicy kick. You can also mix in Fusilli pasta or other crunchy vegetables to turn this side dish into a hearty salad.
