- 5.3 oz Pork (Lean cut or loin) Thinly sliced into strips
- 1.1 oz Chives Cut into 2-inch lengths
- 1 ea Bell Pepper Red or Yellow
- 0.25 ea Carrot Thinly sliced
- 0.50 ea Onion Thinly sliced
- 0.5 ea Enoki Mushrooms or Shiitake Mushrooms
- 1 tbsp Minced Garlic Freshly minced is better
- 1 tbsp Mirin or Rice Wine
- 4 tbsp Vegetable oil or Cooking oil
- 2.5 tbsp Jin Soy Sauce or Dark Soy Sauce Korean Dark Soy Sauce (Jin-Ganjang)
- 1 tbsp Oyster Sauce
- 1 tbsp Tuna Fish Sauce or Tuna Liquid Adds a deep savory flavor (Umami boost)
- 2 tbsp Brown Sugar or sugar
- 1 tbsp Sesame Oil
- 1 tbsp Toasted Sesame Seeds Garnish at the end for extra crunch and aroma

- Marinate the pork slices: Place the sliced pork in a bowl. Add 1 tablespoon of minced garlic and 1 tablespoon of soy sauce. Toss well to coat evenly and let it marinate for at least 15 minutes to enhance the depth of flavor.Prepare the vegetables: Cut the vegetables into 2-inch long strips, keeping them about 1/16 inch thick. Aim for uniform, thin slices to ensure they cook quickly and blend beautifully with the glass noodles.

- Stir-fry the pork and vegetables: Heat a large pan with vegetable oil. Add the marinated pork slices and stir-fry for 1 minute. Add the sliced carrots and bell peppers, and sauté over high heat for 30 seconds.Add the seasonings: Pour in 1.5 tbsp of soy sauce, 1 tbsp of Mirin, 1 tbsp of oyster sauce, and 2 tbsp of brown sugar (or sugar). Stir-fry together, then pour in 6 oz of water to create a flavorful base for the noodles.

- Cook the noodles and vegetables: Drain the soaked glass noodles in a sieve and add them to the pan. Immediately add the sliced onion, chives, and Enoki mushrooms (or Shiitake). Stir and mix well for about 5 minutes over medium-low heat until the noodles are fully cooked and translucent.The Final Touch: Once everything is well-combined and the sauce is absorbed, turn off the heat and drizzle with 1 tbsp of sesame oil for a rich, nutty finish.Cook until the liquid is fully absorbed
