Instructions
- Step 1: Slice the onion, carrot, and shiitake mushrooms thinly. Clean the shrimp well, remove the shells and heads, and finely chop 5 of them while leaving the other 5 whole.

- Step 2: In a heated pan, melt 20g of butter and sauté the onions over low heat until they turn golden brown and caramelized.

- Step 3: Add the carrots and shiitake mushrooms, sauté a bit longer, pour in 350ml of broth, and bring to a gentle simmer.



- Step 4: Add the solid curry cubes to dissolve completely, then add 1 tsp of soy sauce and the chopped shrimp.

- Step 5: Whip the heavy cream using a hand blender’s whisk attachment in one consistent direction to fold air smoothly into the cream, creating a light texture ready to be served as a side dollop, and set aside.

- Step 6: In a separate pan, melt 10g of butter and pan-sear the remaining 5 whole shrimp until cooked through.

- Step 7: Add the udon noodles directly into the simmering chunky sauce (if using frozen udon, ensure they are pre-blanched as noted above), cooking and tossing gently for 2–3 minutes until the noodles absorb the savory flavors and turn chewy.
