Ingredients
- —Main Ingredients:—
- 1.5 cups rice soaked for 30 mins
- 4 chicken drumsticks dak-bukchae
- 40 g solid curry cubes
- 1/2 onion
- 1/2 potato
- 1/2 carrot
- 350 ml water divided: 100ml & 250ml
- —Sub Ingredients:—
- 20 g butter divided: 10g & 10g
- 50 ml milk for soaking chicken
- A pinch of salt
- A pinch of pepper
Instructions
- Step 1: Clean the chicken drumsticks thoroughly, make shallow cuts on them, and soak them in milk for at least 30 minutes to remove any gamey odor. Rinse well under running water and drain.

- Step 2: Slice the onion thinly, and dice the potato and carrot into small, bite-sized cubes.

- Step 3: Melt 10g of butter in a heated frying pan and well-sear the chicken drumsticks with a pinch of salt and pepper.

- Step 4: Caramelize the sliced onions with 10g of butter until they turn light brown.

- Step 5: When the onions are caramelized, add the carrots, potatoes, soaked rice, and 40g of solid curry cubes, pour in 100ml of water, and stir-fry until the curry dissolves nicely.

- Step 6: Once stir-fried to an extent, pour in the remaining 250 ml of water, place the seared chicken drumsticks on top, cover with a lid, and simmer over low heat for 10 minutes.

- Step 7: Once the cooking time is complete, let it steam (reum) for 5 minutes without opening the lid. Mix well before serving.
