Ingredients
- —Main Ingredients:—
- 2 cups rice soaked for 30 mins
- 1 kg fresh mussels
- 50 g radish
- 10 g dried seaweed miyeok, soaked for 30 mins
- 280 ml reserved mussel broth
- —Sub Ingredients:—
- 2 tbsp Korean soy sauce gukganjang
- 1 tbsp tuna concentrated extract tuna essence
- 1 tbsp sesame oil
- 1 tbsp rice wine cheongju
- 1 tbsp minced garlic
Instructions
- Step 1: Clean the mussels thoroughly, bring water to a boil, add 1 tbsp of rice wine, and boil the mussels until cooked. Separate the mussel meat and save the mussel boiling water to use as broth.

- Step 2: Slice the radish into thin, rectangular pieces. The dried seaweed should already be soaked for 30 minutes in cold water; rinse, squeeze out excess water tightly, and cut into bite-sized pieces.

- Step 3: Heat 1 tbsp of sesame oil in a heated pot. Add the seaweed, radish, and 1 tbsp of minced garlic, and stir-fry them together.

- Step 4: Add the soaked rice, a splash of mussel broth, 2 tbsp of Korean soy sauce, and 1 tbsp of tuna extract. Stir-fry until the rice grains become slightly translucent.

- Step 5: Pour in 280 ml of the reserved mussel broth, cover with a lid, and cook over medium heat for 5 minutes. Once it begins to boil, reduce to low heat and simmer for 10 minutes.

- Step 6: Open the lid and place the cooked mussel meat evenly on top of the rice. Cover with the lid again and keep on low heat for about 5 minutes. This allows the gentle warmth inside the earthen pot (ttukbaegi) to deeply infuse the rice grains with the rich aromas of the mussel broth, seaweed, soy sauce, tuna extract, and sesame oil. Mix well before serving.
