  • 3-4 sheets Gim Dried seaweed/nori sheets
  • 3 cups Cooked short-grain rice warm
  • 1 tablespoon Sesame oil for seasoning rice
  • A pinch of Salt and toasted sesame seeds
  • Tuna Mayo Filling:
  • 1 can approx. 5-6 oz / 150g Tuna, drained thoroughly
  • 2-3 tablespoons Mayonnaise
  • 1 teaspoon Soy sauce or a dash of black pepper to taste
  • Optional secret touch: A small amount of finely minced pickled radish or pickled jalapeño to cut through the richness
  • Other Classic Fillings:
  • Danmuji Korean yellow pickled radish strips
  • Goun-carrot or julienned carrots lightly sautéd
  • Fresh perilla leaves Kkaennip — Crucial for wrapping the tuna and adding a refreshing herbal aroma

Instructions
 

  • Step 1: Prepare the Seasoned Rice

  • In a large bowl, mix the warm cooked rice with 1 tablespoon of sesame oil, a pinch of salt, and toasted sesame seeds. Gently fold the rice using a paddle to avoid mashing the grains, then let it cool slightly.
  • Step 2: Make the Tuna Mayo Filling

  • In a mixing bowl, combine the thoroughly drained tuna, mayonnaise, and a pinch of black pepper. Mix well until creamy. If adding minced pickles or perilla leaves for texture, keep them ready.
  • Step 3: Lay Out the Seaweed

  • Place a sheet of Gim (shiny side down) on a bamboo rolling mat. Spread an even, thin layer of the seasoned rice over the seaweed, leaving about 1 inch (2.5 cm) empty at the top edge to help seal the roll later.
    Lay down flat perilla leaves across the lower middle of the rice. Spoon the creamy tuna mayo mixture in a neat line over the perilla leaves, then arrange the yellow pickled radish (danmuji) and carrots right alongside it.
  • Step 4: Roll and Slice
  • Using the bamboo mat, carefully lift the edge and roll the kimbap tightly over the fillings, applying gentle pressure. Brush a little sesame oil over the finished roll for a glossy shine. Slice into bite-sized rounds with a sharp, slightly wet knife and serve immediately!
