Recipe Notes
A Note from Park’s Kitchen: Marinating the salmon before cooking gives it a deeper savory flavor. Adding the green bell peppers near the end keeps them fresh and slightly crisp, which balances the richness of the salmon.
Why This Salmon Sotbap Works
- Pan-seared salmon: Pan-searing the marinated salmon adds a savory, lightly browned crust and gives the rice extra flavor as it cooks.
- Flavorful rice: The salmon marinade adds savory and slightly sweet flavors to the rice as it cooks with the salmon.
-
Fresh green peppers: Adding the green bell peppers during the final steaming stage helps keep their color and a little crunch.
### 💡 Optional Toppings & Flavor Variations
* **For Extra Crunch & Flavor (Furikake):**
Lightly sprinkle Japanese furikake or toasted sesame seeds with crushed seaweeds just before serving for an extra layer of savory crunch. * **For a Luxurious Gourmet Touch (Salmon Roe / Ikura):**
Top the finished pot rice with a spoonful of fresh salmon roe (Ikura). The salty, popping pearls pair fantastically with the rich, tender salmon. * **For Deep Umami (Low-Salt Salted Pollack Roe / Myeongran):**
Slightly sear low-sodium pollack roe and place it on top of the rice along with the peppers during the 5-minute steaming stage.
*(Chef’s Tip: Since salted pollack roe adds natural salinity, reduce the marinade added to the rice in Step 4 from 2 tbsp to 1 tbsp to maintain the perfect flavor balance.)* — ### 🥣 Optional Cream Sauce (For a Richer, Modern Twist) If you prefer a rich, creamy, and velvety finish, drizzle this simple **Wasabi Soy Cream Sauce** over the rice right before mixing: **Ingredients:**
* 3 tbsp Heavy Cream (or Whole Milk for a lighter texture)
* 1 tbsp Mayonnaise
* 1 tsp Soy Sauce
* 1/2 tsp Wasabi paste (adjust to taste)
* A pinch of black pepper **Instructions:**
1. In a small bowl, whisk all the sauce ingredients until smooth and creamy.
2. Drizzle gently over the hot salmon and rice just before serving. The sharp kick of wasabi cuts through the rich cream and elevates the savory salmon to a whole new level!
