- 1 cup Shrimp Peeled & deveined. Large shrimp should be butterflied. 15~20ea
- 1/2 cup Calamari (Squid) Rings or chopped tents
- 1/4 cup Clam meat or Scallops Chopped into bite-sized pieces.

- 1 cup All-purpose Flour Standard plain flour.
- 1/2 cup Cornstarch Key for the crunch. (Can substitute with Rice Flour).
- 1 1/4 cup Ice-cold Water Must be very cold to ensure a crispy texture.
- 4~5 tbsp Vegetable Oil (divided) For frying. Be generous to get crispy edges.
- 1/2 tsp Curry Powder The Secret Ingredient: For a golden hue & odor removal.
- 1/2 tsp salt To season the DIY batter.
Instructions

- 1. Seafood PreparationShrimp : Rough chop into medium pieces. If using large shrimp, butterfly them first and then chop. This helps them stay flat on the pancake.Clam Meat : Rough chop into bite-sized pieces. Small pieces ensure they don't fall off when flipping.Calamari/Squid :Slice into 2-inch (5cm) lengths and 0.4-inch (1cm) thickness. This size balances perfectly with the length of the scallions.

Vegetable PreparationGreen Onions / Scallions : Trim the roots and slice into 2-inch (5cm) lengths, matching the size of the squid.Red Chili or Red Bell Pepper : Remove seeds and slice into 2-inch (5cm) lengths and 0.4-inch (1cm) thickness, identical to the squid and scallions. This adds a vibrant pop of color and a touch of sweetness.

- 3. The Golden Dry MixStep 1: Mix All Base IngredientsIn a large mixing bowl, add 1 cup All-purpose Flour, 1/2 cup Cornstarch, 1/2 tsp Salt, 1/2 tsp Curry Powder, and 1 Large Egg.
