The Ultimate K-Style Salmon Poke: Marinated in ‘Liquid Gold’ Soy Brine

Salmon Poke
Servings 2 people

Ingredients

  • 400 g 1 lb Fresh Sashimi-grade Salmon *Cut into 3/4-inch cubes
  • 300 ml 1 1/4 cups Water *For smoky broth
  • 200 ml 3/4 cup + 1 tbsp Mirin *Sweet rice wine
  • 160 ml 2/3 cup Soy Sauce *Jin or Brewed
  • 2 tbsp Sugar
  • 15 g 0.5 oz Katsuobushi *2 big handfuls (Bonito flakes)

Instructions

  • Step 1: Extracting the Smoky EssenceBring 1 1/4 cups (300ml) of water to a rolling boil. Once boiling, add 0.5 oz (15g) of Katsuobushi (bonito flakes) and let them infuse for exactly 30 seconds. Immediately remove the flakes using a fine-mesh sieve. Do not over-boil, as this quick 30-second technique ensures a clean, pure smoky essence without any bitterness.
  • Step 2: Simmering the 'Liquid Gold' BrineAdd 3/4 cup (200ml) Mirin, 2/3 cup (160ml) Soy Sauce, and 2 tbsp Sugar into the prepared Katsuobushi broth. Simmer over medium heat for 15 minutes. This crucial step allows the alcohol to evaporate while ensuring the flavors blend into a perfectly balanced, 'mellow' profile. Cool the brine completely in the refrigerator before the next step.
  • Step 3: The Magic of Osmosis (Marinating)Place the 3/4-inch salmon cubes in a glass container. Pour the thoroughly chilled brine over the salmon. Cover and refrigerate for 1 to 24 hours. Through the process of Osmosis, the salmon will release excess moisture and absorb the deep umami, transforming its texture into a sophisticated, dense jelly.
  • Step 4: Assembling the Sensory MasterpieceThinly slice creamy avocado, halved cherry tomatoes, and crisp lettuce. Place them in a bowl with the cured salmon. For the finishing touch, add a refreshing squeeze of lemon juice and a drizzle of aromatic toasted sesame oil to awaken all your senses.

Notes

Chef’s Recommendation: This salmon poke pairs exceptionally well with Korean Soy Marinated Eggs (Mayak Gyeran). The creamy, jammy yolk of the marinated egg complements the smoky, dense texture of the salmon, creating a truly luxurious and complete K-style meal.

Chef’s Secret Tip: If you have firm, fresh raw shrimp at home, try marinating them in the same smoky brine for 48 hours (2 days). The shrimp's natural sweetness and snappy texture, when cured alongside the salmon, create an incredible seafood medley. The dense, jelly-like salmon and the bouncy, savory shrimp are a match made in heaven!
