- ------Main Ingredients:-----
- 200 g rice 200 g short-grain rice, rinsed and soaked in water for 30 minutes
- 1 ripe tomato
- 3 stalks asparagus
- 3.5 oz ground beef
- 300 ml water or low-sodium chicken/vegetable broth, or cold-steeped kelp broth
- ------Beef Marinade:------

- 1 tbsp cooking wine or mirin/matsul
- A pinch of ground black pepper
- ------Others:------
- 1 tbsp sesame oil or butter

Step 1: Clean the ripe tomato, cut a shallow cross on the bottom, and slightly trim the stem end. Peel the tough outer skin of the lower part of the asparagus with a peeler, then cut them into 5 cm (2-inch) lengths.
Step 2: Marinate the ground beef with the beef marinade ingredients (soy sauce, cooking wine, black pepper) and let it rest for 30 minutes.
Step 3: Heat 1 tbsp of sesame oil in a heavy-bottomed pot over medium heat, add the asparagus and a pinch of salt, and stir-fry briefly for 1–2 minutes.
Step 4: Add the marinated ground beef and stir-fry until cooked, then add the soaked and drained rice, sautéing everything together for 1–2 minutes.
Step 5: Pour in 300 ml (1.25 cups) of water or broth, and smooth out the top of the rice. Place the prepared whole tomato in the center. Cover and cook over medium heat until it begins to boil (about 3–5 minutes), then reduce to low heat and cook for 10 minutes.
Step 6: Turn off the heat and let it steam covered for 5 minutes. Option: add 1 tbsp of butter on top and mix well before serving.

💡 Pro Tips:
-
Peeling the tough outer skin of the asparagus ensures a tender texture that blends well with the rice.
-
Letting the rice steam for 5 minutes after cooking is essential for achieving fluffy, perfectly cooked grains.
-
💧 Liquid Choice:
-
Plain water works great as the fresh tomato and seasoned beef release abundant juices and flavor. For extra rich umami, feel free to use low-sodium chicken/vegetable broth or cold-steeped kelp broth (Dashima water).
-
📦 Storage & Reheating:
-
Sotbap is best enjoyed fresh immediately after cooking. If storing leftovers, keep them in an airtight container in the refrigerator for up to 1 day and reheat thoroughly.
-
🌿 Variations:
-
Add a drizzle of seasoned soy sauce or melt 1 tbsp of butter right before mixing for an extra savory depth of flavor.
- Creamy Umami Boost: For an ultra-rich, velvety flavor, add 1–2 tbsp of heavy cream and 1 tsp of soy sauce (or seasoned soy sauce) right before mixing the rice. The combination of savory soy sauce and rich cream creates an incredible fusion umami depth.
