  • Step 1. Meat Prep & Moisture Control
Wrap the ground beef and pork in a cheesecloth (gauze) and squeeze gently to remove excess blood and moisture. This ensures a clean, meaty flavor without any gamey smell.
  • Step 1-1. Hydrating the Rice Cakes
Soak 20 rice cake sticks in lukewarm water for 15 minutes. This step is crucial for achieving a soft, chewy texture that matches the tenderness of the patties.
  • Step 2. Infusing the Flavors
To the meat, add 2 tbsp soy sauce, 1 tbsp sugar (or honey), chopped green onion, minced garlic, sesame oil, black pepper, and glutinous rice flour. Mix thoroughly by hand until the seasonings are evenly distributed and the mixture becomes sticky.
  • Step 3. Air-Release & Sculpting
While shaping the patties, firmly toss and knead each portion between your hands to release air bubbles. This ensures a dense, meaty texture and prevents the patties from cracking. Form 4–6 thick, round patties.
  • Step 4. Low-and-Slow Searing
Preheat a pan, then lower the heat to low. Place the patties and cook them slowly. This prevents the sauce from burning while ensuring the inside remains juicy and fully cooked.
  • Step 5. Glazing the Rice Cakes
Once the patties are cooked, move them to the side of the pan. Add the soaked rice cakes along with the remaining 0.5 tbsp soy sauce, 0.5 tbsp sugar (or honey), and 1 tbsp water. Sauté until the liquid evaporates and the cakes are perfectly glazed in savory meat juices.
  • Step 6. Plating & Serving
Cut the garlic chives into 6cm (2.5 inches) lengths and spread them evenly on a serving plate. Place the hot patties and rice cakes on top; the residual heat will soften the chives and release their fresh aroma. Serve immediately.

    1. Classic Soy Dipping Sauce

For a clean and tangy finish that cuts through the richness of the beef.
    • Mix: 1 tbsp Soy Sauce, 1 tbsp Water, 0.5 tbsp Vinegar, and 0.5 tbsp Sugar (or Honey). Add a pinch of black pepper or sesame seeds if desired.

    2. Royal Pine Nut Pesto

A luxurious, nutty topping that adds a buttery depth once reserved for Korean royalty.
    • Ingredients: 2 tbsp Roasted Pine Nuts (crushed), 1 tbsp Sesame Oil, 0.5 tbsp Honey, and a tiny pinch of salt.
    • How to serve: Mix into a thick paste and place a small dollop on top of each patty before serving.
1. The Golden Doneness
Tip: Don't press the patties with a spatula while cooking! To check if they are done, gently press the center with your finger; if it feels firm and bouncy, it's perfectly cooked.
2. Rest for Best Flavor
Tip: Let the patties rest for 2–3 minutes after taking them off the pan. This allows the juices to redistribute throughout the meat, ensuring every bite is moist and tender.

[Revised Pro Tip: The Rice Cake Core Method (Oven-Baked)]

"Modern Twist: The Rice Cake-Centered Patty" For a stunning visual and a chewy surprise in every bite, try wrapping the meat mixture around the rice cakes before baking.
  1. Take a softened rice cake and wrap the seasoned meat mixture evenly around it, leaving just the ends of the rice cake slightly visible (like a bone in a rib).
  2. Place them on a parchment-lined baking sheet and bake in a preheated oven at 180°C (350°F) for 12–15 minutes.
  3. This method allows the rich meat juices to soak directly into the rice cake core, making it incredibly flavorful and tender.
