1. Marinate the Chicken Season chicken with 2 tbsp Soju, 2-3 pinches Salt, and 1/3 tsp Black Pepper. Let it sit for 20-30 minutes. 2. Make the Glaze SauceIn a bowl, combine 3 tbsp Soy Sauce, 1 tbsp Oyster Sauce, 2 tbsp Mirin, 2 tbsp Corn Syrup, 1 tbsp Sugar, 1 tbsp Minced Garlic, and 0.5 tsp Ginger Powder 3. Sear the Skin Heat 2 tbsp Cooking Oil in a pan over medium-high heat. Place the chicken skin-side down first. Flip the chicken frequently every 2–3 minutes to ensure it cooks evenly without burning. Continue searing for a total of 10–13 minutes until both sides are golden brown and the skin is crispy. 4. Cut into Bite-Sized PiecesRemove the cooked chicken from the pan (or push to the side) and cut it into bite-sized chunks. This ensures the savory sauce can penetrate every surface of the meat. 5 Glaze with SaucePour the prepared Soy-Glaze Sauce over the chicken. Simmer over medium heat for about 5 minutes.
