Ingredients

  • 700~800 g Chicken Thighs (Boneless)
  • 2 2 tbsp Rice Wine(soju)
  • 2~3 pinches Salt
  • 1/3 tsp Black Pepper
  • 3 tbsp Soy Sauce
  • 1 tbsp Oyster Sauce
  • 2 tbsp Mirin (Cooking Wine)
  • 2 tbsp Corn Syrup (Mul-yeot)
  • 1 tbsp Sugar
  • 1 tbsp Minced Garlic
  • 0.5 tsp Ginger Powder
  • 2 tbsp Cooking Oil
  • 1 tbsp Sesame Oil

Instructions

  • 1. Marinate the Chicken
Season chicken with 2 tbsp Soju, 2-3 pinches Salt, and 1/3 tsp Black Pepper. Let it sit for 20-30 minutes.
  • 2. Make the Glaze Sauce
In a bowl, combine 3 tbsp Soy Sauce, 1 tbsp Oyster Sauce, 2 tbsp Mirin, 2 tbsp Corn Syrup, 1 tbsp Sugar, 1 tbsp Minced Garlic, and 0.5 tsp Ginger Powder
  • 3. Sear the Skin
Heat 2 tbsp Cooking Oil in a pan over medium-high heat. Place the chicken skin-side down first. Flip the chicken frequently every 2–3 minutes to ensure it cooks evenly without burning. Continue searing for a total of 10–13 minutes until both sides are golden brown and the skin is crispy.
  • 4. Cut into Bite-Sized Pieces
Remove the cooked chicken from the pan (or push to the side) and cut it into bite-sized chunks. This ensures the savory sauce can penetrate every surface of the meat.
  • 5 Glaze with Sauce
Pour the prepared Soy-Glaze Sauce over the chicken. Simmer over medium heat for about 5 minutes. Simmer until the sauce reduces to a syrupy consistency and coats the chicken evenly with a shiny glaze. When the sauce bubbles thicken and the pan bottom is visible for a second when scraped, it's perfectly done.
! Cooking Time: Approx. 5 minutes
"As the water evaporates, the sauce bubbles will grow larger and thicker. This is the signal that the sugars are caramelizing into a beautiful glaze."
    ! Heat Level: Medium
"Stop simmering when there are still 1–2 tablespoons of sauce left in the pan. The residual heat will continue to thicken the sauce even after the heat is off.
  • 6. The Final Touch
Turn off the heat and drizzle with 1 tbsp Sesame Oil for a nutty aroma.

Notes

Garnish Tips for a Beautiful Finish
Option 1: Fresh Greenery
"For a pop of fresh color and flavor, garnish with finely chopped green onions or chives just before serving."
Option 2: Vibrant Red Accents
"If you want to add a vibrant red touch, thinly sliced red bell pepper makes an excellent substitute for traditional Korean shredded red pepper."Transform into
Garlic Soy Chicken
"If you're a garlic lover, double the amount of minced garlic in the sauce. The intense, savory aroma will transform this dish into a restaurant-style Korean Garlic Soy Chicken."
