- 75 g Silken Tofu (연두부) approx. 3/4 block
- 20 g Cocktail Shrimp (칵테일새우) approx. 5 pcs
- 1/2 large Egg (달걀) 30g beaten
- 13 g Heavy Cream (생크림) approx. 1 tbsp
- 5 g Sugar (설탕) approx. 1 tsp
- 5 g Unsalted Butter (무염버터) approx. 1 tsp melted
- 10 g Fresh Spinach (시금치) 3 stems chopped
1. Prep and Parboil Shrimp: Finely dice cleaned shrimp. In boiling water, parboil shrimp for 10-20 seconds until pink, then drain completely.
2. Mix Silken Tofu Base: In a mixing bowl, combine silken tofu, egg, sugar, heavy cream, and melted butter. Blend or whisk until silky smooth without any lumps.
3. Garnish and Steam to Perfection: Finely chop fresh spinach and sprinkle on top of custard. Cover bowl with heat-safe wrap and steam in steamer for 10 minutes until set.
