- ----Main Ingredients:----
- 2 bowls freshly cooked pot rice 1 bowl per person
- 80 g solid curry cubes
- 1 onion
- 80 g carrot
- 3 shiitake mushrooms
- 30 g butter divided: 20g & 10g
- 16 shrimp cleaned, shells and heads removed
- 2 stalks chives jjokpa
- 100 ml heavy cream saeng-keum, divided: partly for blending, partly for whipping
- 600 ml water
Step 1: Slice the onion, carrot, and shiitake mushrooms thinly. Clean the shrimp well, remove the shells and heads, and cut 10 of them into bite-sized 1cm cubes while leaving the remaining 6 whole.
Step 2: Melt 20g of butter in a heated pan and sauté the onions over low heat until they turn golden brown and caramelized.
Step 3: Add the carrots and shiitake mushrooms, sauté a bit longer, pour in 600ml of water, and simmer gently over low heat.
-
Step 4: Add the solid curry cubes to dissolve, then use a hand blender to blend the mixture until smooth and creamy.
Step 5: Stir in the chopped shrimp and a portion of the heavy cream, then simmer for another 5 minutes.
Step 6: Whip the remaining heavy cream using a hand blender's whisk attachment in one consistent direction to fold air smoothly into the cream, creating a light and velvety texture ready to be served as a side dollop.
Step 7: In a separate pan, melt 10g of butter and pan-sear the remaining 6 whole shrimp until cooked through.
Step 8: Plate the freshly cooked pot rice, pour the smooth curry over it, and top with the seared whole shrimp, chopped chives, and an elegant dollop of whipped cream right on the side to finish.
